The Wine
This varietal is beyond exotic. Tropical notes of vanilla, mango
and nutmeg support ripe melon and pear fruit. The finish is a racy
melding of creamy lushness with the edgy tingle of minerals and
citrus. This wine is not your granny's Chablis.
The Vines
Slender vines cling to cobbley, silty river-wash, an area known for low
crops and ultimate ripeness. We chose the varietal to complement and
complete our menu of Rhône-sourced flavors; the grafting wood came
to us from Tablas Creek Winery, a California sibling of Chateau de
Beaucastel in the Rhône Valley. Ours are young vines with the wisdom
of the ages
Thought for Food
This unctuous wine wants a sweet/savory flavor balance. Moroccan squab tagine
